Real Food

I'm always talking about real food, but what is real food?  I describe it as a meal made from unprocessed, good quality ingredients.  For example, it would be like the difference between mac n cheese out of a box and mac n cheese made from scratch.  Don't get me wrong, I know that mac n cheese from a box has it's place in our busy lives (and my kids would eat it daily if I let them).  Or, ever compare frozen chicken nuggets to homemade chicken breast tenders?  The textures are drastically different (most due to the fillers in the frozen nuggets).  Nutritionally speaking, many of these convenience foods are pumped up with sodium and fillers and devoid of nutrients. 

In addition to the better nutrition, cooking real food is a way to connect with others (and sometimes, yourself).  Some would say that cooking is even therapeutic.  I would agree...ever hear of baking therapy?  There's something about creating magic in the kitchen.  Cooking also creates fellowship and lasting bonds much like sharing a good meal.  When my twelve year old nephew visits, he always wants to make something in the kitchen.  Most of the time his requests are for Russian soup or donuts.  I know quite a combo, huh? This has been a special time that we've been able to talk about stuff and share the common bond of cooking.  Of course, it usually turns silly when we see what ingredients from around the kitchen we can wrap in dough and fry (more on that at a later time).  I also think about the time a group of former coworkers decided to plan a Saturday to cook a Mexican feast.  I still remember the incredible chile stuffed chicken breast we made that day.  We must've spent the entire day cooking and even ended up running out to buy wine at the end of the night.  You really get to know people when you spend all day cooking with them!  Now that I think about it, that dinner was ten years ago.

So, just to make sure we're straight.  I'm a Registered Dietitian and a CIA grad chef and yes, I do eat convenience (AKA junk) foods.  As I always say...everything in moderation.  It's hard for me to turn down an American cheese on white bread sandwich with Kraft mayo.  It reminds me of childhood and is probably my most favorite comfort food.  Do I eat like this all the time?  No.  This blog is to share my experiences of cooking at home to not only eat better nutritionally but also share in the art of cooking.  Cheers!
